Turkey giblets, which consist of the heart, liver, gizzard, and neck, are often discarded by home cooks, but they can actually be quite delicious and add interest to Thanksgiving dishes. The giblets can be cooked in a variety of ways, such as roasting them with the turkey or frying them separately. They can also be used to make giblet gravy or added to stuffing for added flavor. Some chefs even suggest using turkey giblets to make nontraditional dishes, such as bolognese. Additionally, the pygostyle, or “smoked turkey butts,” is a fatty lump of meat that can be smoked and is considered a delicious part of the turkey by some chefs.
